~ 1/3flour
olive oil
1 C. thinly sliced shallots (~3-5)
4 cloves garlic, chopped
1/3 cup dry white wine
2 C. vegetable broth
1/4 tsp. salt
several pinches black pepper
small pinch dried thyme (or ~1 T. fresh)
1/4 C. capers with a little brine
1/2 C. pitted kalamata olives sliced in half
juice of 1 lemon (2-3 T.)
3 T. freshly chopped parsley (don't use dried!)
