baked pasta
- 12 oz dried pasta in the shape of your choice
- 2 carrots, shredded
- 1 lb. of ricotta
- 1/3 c. fresh basil
- 25. oz can of tomato sauce
- 3 T. fresh smashed garlic
- 8 oz seitan
- 2 T. lemon juice
- 4 tsp olive oil
- 1/2 c. chopped parsley
Preheat oven to 400F. Cook pasta. Mix+cook carrots, seitan, tomato sauce for 10 minutes. Hand-mix basil, lemon juice, 2tsp oil until it looks like ricotta. Combine pasta, tomato-seitan mix, and parsley into dish. Bake for 15 min.
