Aloo Gobi
- 2-3 large potatoes
- 1 head of cauliflower
- 1 whole ginger root, about 4-5 inches long
- cumin
- garlic
- oil(light/flavorless like coconut or canola)
- coriander
- garam masala
- chili powder
- 1 cup water
Lightly fry potatoes in oil for about 10 minutes. Add cauliflower and water. Cook about 10 minutes. Add garam masala, ginger, garlic, chili powder, and cover. Cook until just soft (time varies but maybe 20-30 min?). Lightly mash some of the potatoes with the back of a mixing spoon to thicken the sauce. Add the rest of the spices and cook another 10 minutes.
This picture has peas, which I haven't tried but would probably be good. I'd add frozen peas after the mashing stage.
